Crock-Pot Carmel Apples


I made Crock-Pot Carmel Apples. No we did not have this for dinner, but for desert. It started out as a project to do together, but quickly turned into a Mommy project.

Here is what we did:
2 packages of Carmels
8 apples
a couple tablespoons of milk

Unwrap Carmels and place in Crock-Pot. Add a couple of tablespoons of milk into the Crock-Pot. Cook on High for 1 - 2 Hours, stirring frequently.

When fully melted, stick sticks into apples and set apples in Crock-Pot and spoon Carmel over apples. Set the apples on a plate and allow to cool.


Verdict:
Just as good as Carmel Apples can be! We had one problem, I set the apples on wax paper and the wax paper stuck to the apples.

Migas

Some of my friends were talking about how good this recipe is, so I thought we would try it. Sure enough it is great! I found it over a the Pioneer Woman's website. I did not figure I could take a picture of it as well as pioneer woman. Verdict:
My husband and I love these, but my kids are not very excited. It is one of those meals where I have to say, "You must eat 5 bites before you can get up and not small bites, but big bites."

No exciting dinners

We have had a busy couple of days and dinner has not been very exciting around here.

Wednesday night we had church. We just had peanut butter and honey sandwiches for dinner.

Thursday night we had presentation night for the kids Coop classes. That meant sandwiches again. I did cook some beef sausage and scrambled some eggs. I then grilled the bread and put the sausage on the bread and the eggs. I would have put cheese over the top, but we were out.

Friday night I had a dinner to go to. The kids went to Mimi and Papa's and Chris worked late.

Sweet and Sour Chicken


I adapted this recipe from the October Woman's Day. There is a varity of sauces to make stir fry in this month's issue.


Sweet and Sour Sauce
1/2 c apricot preserves
1/4 c ketchup
2 T cider vinegar
1 garlic clove minced
I put this in the blender to get the apricot preserves chopped up well.

Take about 1 pound of chicken chunks put in a Ziploc bag and add 2 T cornstarch. Shake to coat. heat 1 T oil in a skillet. Add chicken and cook until chicken is fully cooked. Add sauce and cook until heated through. Serve over rice

I served the leftover green beans from yesterday's meal with this.

Verdict:
The kids really liked this. They even ate a little more chicken before bed. I thought I could taste the cornstarch. I think next time I will leave out the cornstarch. It was very easy and quick to make.

CrockPot Steak and Potatoes with Green Beans


I found this recipe over at the CrockPot Lady's blog. It was very easy and the smell made me very hungry when I went in my kitchen. I did make some minor modifications. Check out her blog for the exact recipe. http://crockpot365.blogspot.com/2008/08/crockpot-layered-dinner-steak-potatoes.html


1 1/2 lbs. steak
1 T of your favorite seasoning rub
1 small onion chopped
2 T Worcestershire sauce
1/4 cup cooking sherry (or broth, apple juice, etc.)

2-4 potatoes
aluminum foil

Place meat in the bottom of your crockpot and rub with seasoning and onion. Flip to the other side and repeat process. Add cooking wine and Worcestershire sauce.

Wash potatoes and wrap in foil. Place in the crock pot on top of the steaks.

Cover and cook on High for 5 - 7 hours or on low for 8 hours. I cooked our for about 5 1/2 on High.


Verdict:
These were great!! The meat was so tender that you did not even need a knife to cut it! Even the kids ate it up.



Green Beans
These green beans do not have an exact recipe. I just put everything in a pot and cook until the green beans are done.

frozen green beans or canned
1/4 c brown sugar
2 T butter
liquid smoke
garlic salt

Pizza!!



We went to check out our new Target the other day. While we were there I saw these pizzas on sale 2 for $8. That is not just a super bargain, but I did not have any other plans for dinner. I bought a Cheese pizza for the kids and a Chicken with Garlic for my husband and I. My husband is a firm believer in every meal must have meat. They did not have any beef pizza and we do not eat pork, so that left us with Chicken.


Verdict:
We really liked the cheese pizza, but the chicken with garlic was just okay. I do not know if I would buy the chicken again.

Beefy Cabbage Casserole


I had a head of cabbage that I needed to use. I am not a big fan of cabbage or Cole slaw. When I saw this recipe I thought it was worth a try. I found it at http://www.dianaskitchen.com/ I did make some minor changes to her original recipe. I did not make a separate vegetable to go with this since it had cabbage in it.

1 lb. ground chuck
1 head of cabbage (shredded)
1 onion (chopped)
1 tsp. salt
1 dash of pepper
1 cup cheddar cheese (shredded)
1 cup sour cream
1 cup herb seasoned stuffing crumbs, tossed with 2 tbs melted butter

Brown beef, add cabbage, onion, salt, and pepper. Cover and cook slowly until the cabbage is translucent, about 10 minutes. Add cheese and sour cream. Mix well and heat through. Transfer to a warmed and greased casserole dish. Top with buttered stuffing crumbs. Bake 400 degrees for about 10 to 15 minutes, until topping is browned.
Serves 4 to 6

Verdict:
I really liked it, but it could use a little bit more salt. My husband said he liked it, but he added Soy Sauce to it. My son said he liked it and ate most of it. My daughter did not eat much. She had to be told she had to eat or no cookie.
