Beefy Cabbage Casserole


I had a head of cabbage that I needed to use. I am not a big fan of cabbage or Cole slaw. When I saw this recipe I thought it was worth a try. I found it at http://www.dianaskitchen.com/ I did make some minor changes to her original recipe. I did not make a separate vegetable to go with this since it had cabbage in it.

1 lb. ground chuck
1 head of cabbage (shredded)
1 onion (chopped)
1 tsp. salt
1 dash of pepper
1 cup cheddar cheese (shredded)
1 cup sour cream
1 cup herb seasoned stuffing crumbs, tossed with 2 tbs melted butter

Brown beef, add cabbage, onion, salt, and pepper. Cover and cook slowly until the cabbage is translucent, about 10 minutes. Add cheese and sour cream. Mix well and heat through. Transfer to a warmed and greased casserole dish. Top with buttered stuffing crumbs. Bake 400 degrees for about 10 to 15 minutes, until topping is browned.
Serves 4 to 6

Verdict:
I really liked it, but it could use a little bit more salt. My husband said he liked it, but he added Soy Sauce to it. My son said he liked it and ate most of it. My daughter did not eat much. She had to be told she had to eat or no cookie.
